Clams and oysters

Clams, oysters, snails and whelks are considered the most delicious delicacies in the Guangxi Zhuang autonomous region, and in Beihai, their cooking has been elevated to an art.

It does not take a lot of complicated culinary maneuvers, but cooking a clam or oyster just right takes measured skills.

All along the major tourist attractions, you will see a shack or a makeshift stall selling barbecued oysters, each with its own special seasoning. Some may smother the shells in mashed garlic, some may season with crushed chili flakes, and others may decide to use the classic spring onions and ginger.

The oysters are excellent, succulent and still tasting of the sea. Play safe though, and eat them cooked. These are not oysters you want to risk eating raw.

There are many types of clams and mussels available as well, and they are served either grilled on the half shell, or stir-fried.
