Pumpkins

The Food Rainbow: Orange

The rich orange color of pumpkins is a sign that they are packed with beta-carotene. Our bodies convert beta-carotene into Vitamin A, something that is very good for the skin and the eyes.

Pumpkins are also rich in potassium, a substance associated with lowering blood pressure and decreasing the risks of stroke.

Cooking a bowl of pumpkin soup is a good idea. Stewing it with chicken or duck is not bad either. Pumpkin seeds are also eaten in China. Roast them with a little bit of salt and pepper and they make delicious snacks.

Carrots

Carrots, practically a nickname for beta-carotene, cannot be bad for you. Truly a versatile bunch, carrots are yummy both raw or cooked. They are packed with beta-carotene, fiber, potassium, calcium, and Vitamins C, D, E, K and B. They also help cleanse the body by removing unwanted toxins.

Shorter carrots (less than 6 inches) tend to be sweeter than longer ones. Most of the nutrients are just below the skin so it's best to have them with the skin intact. Just be sure to brush them thoroughly.

There is only one catch. Excessive consumption of carrots will result in skin discoloration (especially the fingers you use to hold those carrot sticks.) As for all things in life, moderation is the key.
